Texture and fiber
Goat meat has thicker fibers so it has a coarser texture and feels softer when held. While beef fiber is smaller and tenuous, when held it feels more chewy and smooth.
Beef fat also has long white streaks of fat, while goat meat does not. Clumps of mutton fat gathered in certain parts only.
Color
If you look closely, these two meats have different colors. Beef is pale in color and will turn dark brown when exposed to air. Meanwhile, goat meat is bright red in color and will turn slightly purple when exposed to room temperature.
Of course, when cooked the taste of the two meats is also different. Goat meat has a more savory taste than beef. The savory taste of goat meat is influenced by its aroma.
